Tatomer's Meeresboden—German for "Ocean Soil"—is a 100% Grüner Veltliner from practicing organic vineyards in Santa Barbara County. This wine blends fruit from John Sebastiano in the Sta. Rita Hills AVA and Kick-on Ranch west of Los Alamos. Native yeast fermentation in 85% stainless steel and 15% large format acacia, with blocked malolactic conversion, creates a crisp, mineral-driven profile. Bone-dry at less than 1 g/L residual sugar with 13% alcohol. Five passes over six weeks during harvest. Only 300 cases produced.
