Offscript Delegati Pinot Noir captures the essence of ancestral method winemaking. Bottled before fermentation completed, each bottle develops its own character with delicate bubbles and vibrant red fruit notes—strawberry, rhubarb, pomegranate, and cranberry—layered with hints of black tea and spice. Crafted from Pinot Noir grapes harvested at dawn from Block N15 of Olson Ranch Vineyard in Santa Lucia Highlands, this wine underwent cold fermentation to preserve its aromatic complexity. At 12% ABV with bright acidity, it's a living wine that finished its journey in bottle. Light sediment is a natural signature of this traditional method. Each of the 3,000 bottles produced is beautifully unique.
