Derrumbes Oaxaca represents the heart of mezcal tradition from the Central Valleys of Oaxaca. This expression blends two iconic agave varieties—Espadín and Tobalá—crafted by third-generation Maestro Javier Mateo and his family in Santiago Matatlán.
Pit-roasted with black oak and stone-ground using a tahona, the mezcal undergoes wild fermentation with pulque and water sourced from the ancestral Zapotec town of Mitla. The result is a full-bodied spirit with subtle smokiness that opens to mineral notes and delicate fruit, delivering the authentic complexity of Oaxaca's agave heritage.
