Cabal Joven Mezcal 700ml
Cabal Joven Mezcal is crafted from 12-14 year old Salmiana agave harvested in the sierra of San Luis Potosí. The agave is cooked for seven full days in a 200-year-old brick and stone oven, where indirect steam from sabine wood floors preserves the authentic flavor of the plant. The roasted agave is macerated using a traditional roman concrete double tahona, then processed through a larger single tahona to extract every nuance of the aguamiel. Fermentation is sparked with pulque from the same Salmiana agave and left to develop naturally in open-air vats for three days, building complexity and character. The spirit is then distilled twice in copper stills, creating a refined joven mezcal that honors centuries of mezcal-making tradition while delivering the pure, smoky essence of its terroir.
